Chicken, Potato & Spinach Curry
Serves 2 or double for 4
Ingredients

1tbls olive oil

2 chicken breasts cut into small chunks

1 onion chopped

3 cloves garlic crushed
-
1 large potato cut into small chunks

3tbls curry paste
-
Tin chopped tomatoes
-
Bag washed spinach leaves

Handful chopped coriander
Method
- Heat oil in a large pan
- Add onion and garlic and gently fry
- Add chicken, potato curry paste and brown
- Add tomatoes and quarter tin of water. Season with salt and pepper
- Cook gently until potatoes are cooked through.
- Add spinach and half coriander put a lid on and leave for the spinach to wilt.
- Served garnished with remaining coriander and steamed rice
