Chicken, Potato & Spinach Curry

Serves 2 or double for 4


  • 1tbls olive oil
  • 2 chicken breasts cut into small chunks
  • 1 onion chopped
  • 3 cloves garlic crushed
  • 1 large potato cut into small chunks
  • 3tbls curry paste
  • Tin chopped tomatoes
  • Bag washed spinach leaves
  • Handful chopped coriander


  1. Heat oil in a large pan
  2. Add onion and garlic and gently fry
  3. Add chicken, potato curry paste and brown
  4. Add tomatoes and quarter tin of water. Season with salt and pepper
  5. Cook gently until potatoes are cooked through.
  6. Add spinach and half coriander put a lid on and leave for the spinach to wilt.
  7. Served garnished with remaining coriander and steamed rice
