Damson Gin
Ingredients

500gm damsons

250gm caster sugar

1lt bottle of gin (or vodka)
Method
- Rinse the damsons, pat dry and put in a freezer bag to freeze overnight.
- Remove from freezer and bash with a rolling pin.
- Place into two 1lt kilner jars or bottles.
Pour in the gin and sugar. - Replace the lid and shake well. Put in a cool dark place for up to two months shaking well weekly.
- Line a sieve with muslin and strain the gin into clean dry bottles.
- Seal and label. Its now ready to drink but will improve with time.
