Damson Gin


  • 500gm damsons
  • 250gm caster sugar
  • 1lt bottle of gin (or vodka)


  1. Rinse the damsons, pat dry and put in a freezer bag to freeze overnight.

  2. Remove from freezer and bash with a rolling pin.

  3. Place into two 1lt kilner jars or bottles.
    Pour in the gin and sugar.

  4. Replace the lid and shake well. Put in a cool dark place for up to two months shaking well weekly.

  5. Line a sieve with muslin and strain the gin into clean dry bottles.

  6. Seal and label. Its now ready to drink but will improve with time.
