Roasted Tomatoes & Asparagus with Chilli Poached Eggs

Ingredients

  • 100gm Asparagus
  • 200gm Cherry Vine Tomatoes
  • 4 Eggs
  • Olive Oil
  • Chilli Flakes

Methods

  1. Heat oven to 180c
  2. Bring a pan of water to a simmer
  3. Put asparagus and vine tomatoes in a roasting tin drizzle with oil and season
  4. Roast for 15-20 mins
  5. Poach eggs until cooked
  6. Divide asparagus and tomatoes between 4 plates top each with a poached egg and chilli flakes
  7. Serve with crusty bread
