Strawberry Cheescake


  • ½ packet of biscuits ( digestive, gingernuts, shortbread or whatever you fancy)
  • 2-3 oz butter melted
  • 2 tubs cream cheese
  • 1 10oz tub of double cream
  • 1tbls icing sugar
  • Tub of strawberries ( keep some aside for decoration)


  1. Crush biscuits and add melted butter , mix well and put into a square or round loose bottom tin
  2. Put cheese cream icing sugar and strawberries in a food mixer and pulse until thickened
  3. Spread on top of biscuit base
  4. Chill in fridge for 1 hour
  5. Served garnished with strawberries
